"...Bright ruby color that turns a pomegranate red with age. Vinous scent, with a violet perfume and characterized by a marked finesse when aging. Harmonious taste, dry, pleasant to the palate, lightly tannic, becomes refined overtime to a velvety soft texture..." this is the Chianti Classico, with the Gallo Nero (DOCG) label, the red wine envied the world over that originates from this corner of Tuscany, between Florence and Siena, among the valleys of Greve, Pesa and Elsa. The Chianti Classico of Pietrafitta has a soft and enveloping taste and goes very well with red meats and half-aged cheeses.
Frantoio, Correggiolo, Moraiolo, Leccino are the different varieties that the extra-virgin olive oil of Pietrafitta is made from, a very rich and harmonious oil of expertly balanced aromas, which makes it unique in the world for its slightly piquant and barely bitter note. To this day it enhances, raw, the very Tuscan "fettunta" (slice of bread with oil) and "ribollita" (bean soup), and adds that special touch to the classic pinzimonio (oil, pepper and salt dip).
The harmony of the landscape, the vineyards and olive groves, the dense vegetation scented with ancient aromas and inhabited by wild animals were important elements that the province of Siena saw to protect by creating 11 natural reserves. This is a natural setting that can be visited and experienced in every way, thanks to the trails and itineraries that have been set up to discover the most intimate secrets of the Chianti and Siena region. One visit should be to Bosco di Sant'Agnese, at Castellina in Chianti, the century-old cypress forest that surrounded ancient Pieve back in the 11th century.
Ancient towns that are true bastions of Etruscan, Medieval and Renaissance history, and whose narrow streets speak of the rich historical and artistic Tuscan culture. Castellina, Radda and Gaiole, are delightful villages that are a prelude to splendid Siena and San Gimignano, authentic collections of masterpieces that have come down to us unchanged by time or history.
