3.5 hectares of Borgo di Pietrafitta's olive groves are located on terraces, while the remaining 2 hectares are monovarietal. We grow traditional local Chianti varieties, especially Frantoio and, to a lesser extent, Pendolino, Leccino and Moraiolo. The training system is the polyconic vase. The olives are hand-picked from the trees in order to preserve the integrity of the fruits as much as possible and avoid triggering oxidative processes that would compromise the quality of the oil. Because of the type of soil, the altitude of the olive groves, the manual harvest and cold extraction in the mill, the resulting oil has an incredibly fruity fragrance and flavor and an excellent ability to keep over time.
It has very low acidity (0.2% at origin) with an intense yellow/green color, is distinctly fruity yet delicate, slightly peppery and grassy with a pleasant bitter aftertaste.
We recommend it for daily use on soups, grilled meat or fish.
